Colombian Pusundao

This traditional Colombian dish is often served with sliced boiled egg on top. You can also serve with rice, avocado and hot sauce on the side.


500g Hensons Famous Salt Beef
16 pieces of chicken
500g beef for stew, cut into chunks
4.8 litres water
240ml aliños sauce
240ml hogao
6 large potatoes, peeled and cut into pieces
4 green plantains, peeled and cut into chunks
500g yuca, peeled and cut into chunks
4 boiled eggs
Salt and pepper to your taste
100g fresh cilantro or parsley


  • Put the salt beef 4 cups of boiling water for 10 minutes
  • Remove from water and place the meat in a very large pot with the chicken and the beef chunks
  • Add 16 cups of water and aliños sauce and cook for about 20 minutes
  • Add the hogao, potatoes, plantains and cassava
  • Season with salt and pepper and cook for about 20 minutes
  • Once everything is tender, serve
  • Garnish with slices of boiled egg and serve white rice on the side.
